Since 1982, Suzanne Latour, a graduate of LInstitut
Techno-logique et Agroalimentaire de St-Hyacinthe, has
labored in the milk industry, managing a herd of 120 Saanen
goats, of which 60 are yearlong milk producers.
Her, Au Clair de Lune farm is renowned throughout
Canada not only for the compliance of its goats, which are
ecologically fed, but also for the quantity and quality of
the milk it produces.

It was in 1996, that Suzanne started the transformation
of the milk production at her own cheese shop, which is located
next
to the farm in St-François.
The proximity of the two buildings allows the creation
of a
cheese of great quality, for the time between the first milking
and the transformation itself never exceeds 60 hours for a cheese
made from pasteurized milk and 16 hours for one
made from raw milk, like the La Tour St-François.
Also, goats milk, being closest in its nature
to maternal milk,
is easily and quickly digested, making its cheese a healthy alternative
for people suffering from bovine protein allergies,
and is also a product of superior quality.
Even though La Fromagerie du Vieux St-François
is a small yet charming family enterprise, it offers to its clientele
a wide variety of products.

This soft bodied non-ripened fresh cheese, which is marinated in
flavored
grape seed oil (oil which does not congeal in the refrigerator)

name suggests.
